How to Cook Your Chateaubriand

First, let your chateaubriand rest at room temperature for 30 to 40 minutes. Then season generously with coarse salt and cracked pepper. After that, sear all sides in a hot cast iron pan for about 2 minutes per side. Subsequently, transfer to a preheated oven at 400°F. Then roast for 20 to 25 minutes for medium-rare. Finally, rest for 10 minutes before slicing, because this lets the juices redistribute evenly.
