Beef Shank Recipe: Tender, Rich, Easy

Braised beef shank recipe with marrow bone, glossy sauce and carrots served over vermicelli rice

This beef shank recipe is the dish to make when the evenings turn cold. One meaty, bone-in shank, a few pantry spices and about three hours in the oven give you meat that falls off the bone and a rich sauce full of flavour. Our butchers in Laval walk you through it step by step, with tips on serving, leftovers and easy variations.

Why This Beef Shank Recipe Is Worth the Wait

Shank is cut off the leg, a hard-working muscle wrapped in connective tissue. Cooked fast, it stays tough. Cooked low and slow, that tissue melts into gelatin, and the meat turns soft enough to cut with a spoon. The round centre bone holds marrow that melts into the pot as well, so the sauce gets thick and glossy on its own. In short, a good beef shank recipe rewards patience more than almost any other dish.

Our beef shank is cut bone-in with the marrow, at about 900 grams per piece, which is enough for three or four people with sides.

Beef Shank Recipe Ingredients

  • 1 bone-in beef shank, about 900 g
  • Salt and black pepper
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 carrots and 2 celery stalks, diced
  • 4 garlic cloves, crushed
  • 2 tbsp tomato paste
  • 1 teaspoon seven spice, or a mix of cinnamon and allspice
  • 1 bay leaf
  • About 4 cups beef broth

How to Make This Beef Shank Recipe

1. Season and Sear

Pat the shank dry and season it well with salt and pepper on every side. Heat the olive oil in a heavy oven-safe pot over medium-high heat. Sear the shank until it is deep brown all over, about 4 to 5 minutes per side. That crust carries most of the flavour, so take your time. Then move the meat to a plate.

2. Build the Base

Lower the heat and add the onion, carrots and celery to the same pot. Cook for about 5 minutes, scraping up the brown bits. Stir in the garlic, tomato paste and seven spice and cook for 2 more minutes, until the paste darkens slightly.

3. Braise Low and Slow

Return the shank to the pot, add the bay leaf and pour in enough broth to come about three quarters of the way up the meat. Bring it to a gentle simmer, cover with a lid and place the pot in a 325 F oven. Braise for about 3 hours, turning the shank once halfway through. It is ready when the meat pulls easily off the bone and a fork slides in with no resistance.

4. Finish the Sauce

Lift the shank out and keep it warm under foil. Skim the fat off the surface of the liquid, then simmer it on the stove for 10 to 15 minutes until it thickens into a sauce. Taste and adjust the salt. Finally, spoon the sauce over the meat, and do not forget to scoop out the marrow for anyone who loves it.

Food Safety Note

A long braise takes beef shank well past the safe minimum. For reference, Health Canada lists 63 C (145 F) as the minimum for whole beef cuts and 74 C (165 F) for reheating leftovers. Fork tender shank is far beyond the first number, so the focus here is texture, not safety.

What to Serve with This Beef Shank Recipe

The rich sauce in this beef shank recipe needs something to soak it up. Vermicelli rice is our favourite at home, and mashed potatoes or creamy polenta work just as well. Add roasted root vegetables or a crisp green salad with lemon to balance the richness. Warm pita on the side never hurts either.

Beef Shank Recipe Variations

Once you know the basic beef shank recipe, it is easy to change. For a hearty soup, cut the cooked meat into pieces and return it to the broth with extra vegetables and a handful of chickpeas or rice. For a brighter finish, sprinkle chopped parsley, lemon zest and garlic over the meat just before serving, a classic touch for beef osso buco. You can also braise two shanks at once and freeze half for another night.

Storing and Reheating Braised Shank

Like most braises, this beef shank recipe often tastes even better the next day. Cool the leftovers, then keep the meat in its sauce in a sealed container in the fridge for up to four days. Reheat gently on the stove until it is hot all the way through. Any extra fat firms up on top in the fridge, which makes it easy to lift off.

How long does beef shank take to cook?

Braised in a 325 F oven, beef shank usually takes about 3 hours. It is done when the meat pulls easily off the bone and is fork tender.

Do I have to sear beef shank before braising?

It is not required, but it is worth it. Searing builds a brown crust that gives the sauce much deeper flavour.

Can I make this beef shank recipe ahead?

Yes. It reheats beautifully and often tastes better the next day. Keep it in its sauce in the fridge for up to four days.
