Merguez brings bold, North African flavour to 100% halal beef. We season every link with harissa, cumin, garlic, and paprika for a spicy, aromatic bite. Specifically, the harissa gives it that signature red colour and slow-building heat. Our butchers hand-stuff each batch fresh at our Laval shop. No fillers, no lamb blend, and no shortcuts. Just pure beef and real spice.

How to Cook Merguez

Grill over medium heat for 12 to 15 minutes. Then turn often so every side browns evenly. Keep the heat at medium because the thin casing can split at high temperatures. As a result, the juices stay sealed inside where they belong. Cook to an internal temperature of 71°C (160°F), the level Health Canada recommends for ground beef. Rest two minutes before serving.

For indoor cooking, pan-fry on medium for 10 to 12 minutes. Furthermore, you can bake them at 400°F for 18 minutes on a sheet pan. Turn once halfway through. Notably, the oven method works well for larger gatherings since every link cooks evenly without constant attention.

The classic way is in a warm baguette with harissa mayo, grilled onions, and fresh herbs. Moreover, merguez shines in a couscous bowl with chickpeas, roasted vegetables, and a drizzle of olive oil.
